Nutrition Tips

October brings Halloween.  Is it possible to provide your ghost and goblins with nutritious treats?

Here are some "scary" suggestions...

              
Frightening Faces 
        Ingredients:
 
        Pumpkin Faces:
 
                  Light/low fat cream cheese 6 oz
 
                  1 cup carrots, shredded
 
                  1 green pepper, sliced
 
                  1 bag (10-12) whole wheat mini bagels
 
        Wicked Witches:
 
                   Peanut Butter, 6 oz
 
                   6 oz raisins, craisins, nuts (used as eyes, nose, and mouth)
 
                   2-3 celery stalks, shredded
 
 

Pumpkin: Use number of bagels desired.  Separate bagels in half.  Spread each bagel half with 1/2 oz cream cheese.  Cover with 2 TBSP shredded carrots. Cut pepper slice in half.  Arrange half pepper slice for mouth.  Cut other half of pepper slice into triangles or squares and arrange for eyes, and nose.

Wicked Witches: Wash and cut apples in half.  Spread with 1/2 oz peanut butter.  Arrange raisins for eyes and mouth.  Use shredded celery for hair, if desired.

 

Deviled Eyes
       
 Ingredients:
                 10 eggs, hard-boiled

                 1/2 cup low fat mayonnaise
 
                 20 sliced black olives
 
                      Paprika seasoning
                
             Plac eggs in pot until boiling.  Cover with lid, turn off heat, and let stand 20 minutes.  Rinse in cool water to ease in peeling.  Cut eggs in half length wise and hallow out yolks.  Discard half of yolks Mix remaining yolks  with mayonnaise.    Sprinkle paprika on mixture and place into hollowed egg halves.  Place one sliced black olive on each egg.


 

 

 

 

Wild Wraps
       Ingredients:
                1 - 8 oz package of orange flour tortilla/wraps (chipotle, tomato basil flavored)

                1 - 8 oz package of green flour tortilla/wraps  (jalapeño, spinach flavored)

                8-10 slices bread

                3/4 cup low fat mayonnaise, squeezable

                1/2 cup mustard, squeezable

                
8 oz  sliced turkey breast 
                8 oz sliced ham

                1 bunch romaine lettuce

                provolone cheese sliced, if desired

                25 - 30 toothpicks

Spread each tortilla or wrap with 2 TBSP mayo or mustard.  Place two slices of turkey or ham.  Add 2 leaves of romaine lettuce.  Top with cheese, if desired.  Roll sandwiches tightly and secure with toothpicks placed every 3 -4 inches.  Cut wraps evenly between toothpicks.  Arrange on tray.

In middle of tray, make sandwiches with whole wheat bread using above ingredients.   Use mayo or mustard (and patience) to write fun sayings on bread - R.I.P, BOO, etc.

Ghost Guts  
        Ingredients:
                1 - 16 oz container of cool whip

                16 mini snickers bars

                2 large granny smith apples

                2 large empire apples

                15-20 red grapes


Core and cut apples into 1/2" chuncks.  Cut mini bars in half and then into thirds.  Cut grapes in half.  Mix together.  


Cool Carmel Apple  Dip
        Ingredients:

                8 oz low fat caramel apple dip

                8 oz low fat vanilla yogurt

                medium bowl

                6 -8 apples, washed, and cut into 1" slices
 
                
2 TBSP pineapple, or lemon juice
               1 cup water

                small bowl


Core and cut each apple into 5-6 slices.  Place juice and water in small bowl.  Dip apple slices (to prevent browning).  Place carmel dip in medium bowl and mix in yogurt until desired consistency.

Graveyard Gravel  
       Ingredients:

                6 - 6oz snack packs fat free choc. pudding

                12 chocolate graham crackers

                18 gummy worms

                1 cup raisins, craisins

                6 - 8 oz  clear plastic cups

Spoon pudding into cups.  Arrange gummy worms in pudding with 2 - 4 inches poking out from top.  Crush graham crackers in plastic bag.  Sprinkle on top of pudding.  Place raisins, craisins, on top of grahams for bugs.

                




Spooky Spiders

      
Ingredients:
                3 cups rice crispy cereal

                3 cups cocoa krispy cereal

                80 large marsmallows (1+1/2 bags)

                6 TBSP Butter

                Small container red hots

                60 individual licorice strings

                large sheet of wax paper

Cut each licorice string into 3 - 3 inch pieces.  pour red hots in small bowl. Melt 3 TBSP butter in large sauce pan.  Add 40 marshmallows.  Remove from heat and stir in 3 cups of crispy cereal until well coated.  While warm, insert  licorice legs into spiders.  Place 2 red hots at ends for eyes. Place on wax paper to cool.  Repeat above steps using cocoa crispies.
